If you can’t tell I love Squash it’s so versatile. Zucchini is very refreshing. It is a summer squash and it does contain high levels of oxalate. Individuals with a history of oxalate containing kidney stones should avoid over consuming it.
Zucchini can be sprinkled on top of salads, severed as slices raw with your favorite dip, or slice thin, put in oven until crisp and make chips. You can also add it to your favorite muffin or bread recipe by decreasing the amount of liquid in the recipe by about one third to compensated for the moisture present in the squash.

Butternut Squash is a winter squash. Shaped like a pear, this squash has a cream-colored skin, deep or ange-colered flesh, and a sweet flavor. This is a great side dish to any meal. Or a main dish for vegetarians and vegans. There are several different ways to prepare this wonderful squash. It can even serve as a nice sweet crave killer with cinnamon. I prepared mine tonight with a little garlic powder and it is my main dish. Yummy.. Big bowl of Butternut Squash on it’s way down!! Eat Healthy & Yummy. Have a great night.
